Do you like Chinese food?
I personally love the stuff, but even if you don't, this recipe might change your mind!
Not only is it super yummy, but it also uses things you probably already have in your kitchen.
Tasty and easy!
It's real name is Szechuan Noodles & Pork, but my kiddos affectionately call it Peanut Butter Noodles!
Szechuan Noodles & Pork
12 oz. spaghetti
1 c. chicken broth
2 Tbsp. soy sauce
12 oz. ground or cubed pork
1/4 tsp. red pepper flakes {don't worry, these don't add heat, just flavor!}
6 green onions, cut in 1 1/2 inch pieces
1 lg. carrot, grated
1 Tbsp ginger, minced
1 Tbsp. garlic, minced
3 Tbsp. creamy peanut butter
garnish: chopped cilantro or parsley {optional}
Cook pasta as package directs.
Stir together broth and soy sauce in a measuring cup.
Heat a large skillet over medium-high heat.
Add pork and red pepper flakes.
Cook 5 minutes, until browned and no longer pink.
Add green onions, carrot, garlic, and ginger, cook 3 minutes.
Stir broth mixture and penut butter into pork.
Cook until peanut butter is melted and blended.
Reserve 1 cup pasta water.
Drain pasta, add to skillet, and toss to evenly coat with sauce.
{Stir in some pasta water if needed to keep mixture creamy.}
Sprinkle with cilantro or parsley, if you wish.
