This recipe reminds me of "football food" that we enjoy as a family...without football. :) It is great though for a family night when you all gather around to watch a movie or play games.
In this recipe we can use the pizza dough recipe we had posted previously here as the dough and the homemade ranch dressing recipe also that was posted here.
Ingredients:
2 boneless chicken breasts
1 tsp. olive oil
1 pizza dough (I make the dough recipe I mentioned above and use whatever dough is left over for breadsticks or pepperoni rolls. It never goes to waste. :)
8 oz. of Shredded Mozzarella Cheese
3 oz. Shredded Cheddar cheese (we can get Cheddar cheese here now but we never buy it after getting so used to Gouda. So, I use Gouda.)
1/2 cup of wing sauce ( This is the interesting ingredient based on where you live in the world. We have a bottled wing sauce that I usually mixed in with other ingredients back when I made wings a lot for our family. Any hot sauce with a vinegar base would do.)
1/3 cup of ranch or blue cheese dressing (you can make homemade blue cheese dressing but I personally prefer ranch so that is what I use)
Directions:
Cut chicken into cubes. Season with salt and pepper. Heat teaspoon of olive oil in skillet and add chicken when hot. Cool chicken completely and then add 1/4 cup of wing sauce. Stir to coat chicken and let simmer for a minute or two. Take chicken off heat and let cool.
Preheat oven to 200 C (in an oven with a fan) or 220 degrees C (no fan).
One a well floured surface, spread pizza dough into a long rectangle shape.
Add ranch dressing or blue cheese dressing and remaining 1/4 cup of wing sauce. Spread across the dough. Add chicken and then top with cheeses. You can also add a bit more of the wing sauce on top of the cheese if you want a little more "kick".
Roll the dough like a pinwheel until you reach the end. Make sure to tuck the ends of the dough in so the middle doesn't 'ooze' out when baking.
Spray the baking sheet with a light coat of non-stick cooking spray (or like I do, grease the pan with margarine). Place the bread on the pan and bake for 20--25 minutes or until golden brown.
Let it sit for five minutes then cut and enjoy.
